Blueberries, strawberries--so many berries! And to think the season for these delicious fruits is so short! That is why OBC Eats is indulging in a Berry, Feta, Chicken Salad. Berries are nutritionally beneficial, loaded with antioxidants and are great for your skin.  Since delicate berry skins easily absorb pesticides, it’s best to eat organic whenever possible; organic berries are most abundant and affordable during the summer months. So how to incorporate these berries into your meals, rather than just a snack? Our Berry, Feta, Chicken Salad is a great way to make a satisfying yet quick meal filled with a balance between sweet and tart.

Berry, Feta, Chicken Salad (Try to use organic and local ingredients when possible):

Serves 3- 4 People

1 cup of blueberries

1 cup of strawberries

1 bag of spinach

1 block of Feta cheese  

½ cup of almonds

½ cup of walnuts

1-2  pounds of grilled chicken breast

Balsamic vinaigrette to taste


Chop your pre-grilled chicken breast into small pieces and set aside. Form a bed of spinach and add in almonds, walnuts and Feta cheese. Toss in the strawberries and blueberries and top with the grilled chicken. Drizzle dressing.

It is so important to take time out to eat a nutritious meal, and these berries are loaded with vitamins and nutrients that will nourish your body while satisfying your appetite.
